Quick Cioppino

One of my favorite dish – Cioppino for dinner before we left hastily for camping trip!



2 lbs clams (let out sand, scrub the shells)

1 lb white fish, cut in chunks  (I like using Trader Joe’s Icelandic wild Hake for its sturdier texture)

6 tubes of squid, clean and cut into sections  (remove inert and eyes and soft spine)

10 large shrimps (devein and cut the legs off)

1/2 la bay scallops

2 cans of diced tomatoes

2 onions, chopped

4 garlic cloves, minced

2 bay leaves

1 tsp red pepper flakes

1 tsp parsley

1/2 tsp oregano

1/2 tsp thyme

1/2 tsp Old Bay Seasoning

Cooked onion, garlic and red pepper in medium heat until soft and fragrant.

Turn to high heat.  Add tomatoes, bay leaves, parsley, oregano, thyme and Old Bay Spice.  Stir thoroughly.  Cover.  Cook to boil.

Add shrimps, fish and clams.  Cover.  When the shrimps are half-cooked, add squid and scallop.  Cover.

When the clams are all open and rest of the seafood are cooked.  It’s ready!
