Cold Noodle with Peanut Sauce

The continuation of hot sunny weather is fantastic!  Quick cold noodle is in order for dinner tonight.  A lightning speed peanut sauce (recipe below) tossed ramen noodle (I like to use Suu ramen from Uwajimaya for its exceptional chewy texture) with sliced cucumber and carrot.  Would have loved to put in jicama and garnished with green onion as well, but I don’t have them in my fridge, so the simpler version will do.

Lightning speed peanut sauce recipe:

3 Tbsp soy sauce

3 Tbsp peanut butter (creamy or chunky)

2 Tbsp sugar

1 Tbsp water

1 tsp rice wine

½ tsp crushed red pepper

½ tsp grated ginger

½ tsp grated garlic

For surprise optional flavor, I also added about ½ tsp of grated orange peel (just the orange part and make sure the white part is not grated in)

The added orange peel will pop up randomly in your bites, and it is not meant to be adding an overall orange flavor to the sauce.

Warning: this sauce runs in the salty side.  It’s really meant to be tossed with noodle or eat with lots of rice!

The rest of the cold noodle:

Cut carrot and cucumber in match sticks (and/or jicama).

Cook ramen noodle according to the direction.  Drain and cool with running cold water .

Toss all vegetables and noodle with peanut sauce.
